How we grade this

Powder cannot be graded by eye, so the grading that matters happens on the bark before milling: thickness, oil and a clean smell. On the finished powder, Kun and Chuangui rub a sample between their fingers for colour and aroma and taste it for sweetness without bitterness, then check the sieve result against the ordered mesh. Volatile oil, moisture and microbiology come from the laboratory.

Frequently asked questions about Ground Cassia

Which mesh should I order?

Common choices are 60 mesh (coarse), 80 (general use) and 100–120 (fine). Finer is not automatically better. State the mesh, the sieve standard and the percentage that must pass.

Is ground cassia the same as ground cinnamon?

In many markets, “cinnamon” on a label means cassia. Botanically it is Cinnamomum cassia, not Ceylon cinnamon (C. verum). Your market's labelling rules decide what you can call it.

What about coumarin?

Cassia naturally contains more coumarin than Ceylon cinnamon, and the European Union sets maximum levels for some foods. See our guide to ground cassia, and agree the tests your product needs.

Why is powder cheaper than sticks?

Powder is usually milled from bark pieces and chips rather than presentation rolls. Its aroma depends on the bark's oil, not its shape.
